Going Green

When you need that extra jolt in the morning, pass over your second cup of coffee and instead try this green juice, a favorite breakfast alternative for Vince Camuto Creative Director Louise Camuto.

The main ingredient is kale (“the new spinach”), an incredibly nourishing food, high in iron and calcium and rich in Vitamins A, C and K. Despite its nutritional virtues, kale’s bitter or earthy taste can be a turn off for some palettes. Juicing the leafy green breaks down its fibrous texture while mixing it with sweet apples and crisp mint masks the green’s bitter taste. The result is a sweet and tangy drink that will keep your energy levels up until lunch.

Ingredients 2 bunches of kale 3 apples 2 stalks of celery ½ lemon 1 bunch of parsley 1 bunch of mint

Directions Process all ingredients through a juicer. Store any extra in a glass jar for up to a day and shake before drinking.
